COMMI 1 (高级厨房助理 / 一级厨房学徒) Experience Level: Most experienced among the Commis roles. Duties: Prepares basic to intermediate Chinese dishes (e.g., stir-fries, noodle dishes, basic sauces). Assists in cooking during peak hours. Helps train junior staff (Commi 2 & 3). Ensures hygiene and kitchen cleanliness. Skills Needed: Good knife skills, knowledge of wok cooking, timing, portioning. COMMI 2 (中级厨房助理 / 二级厨房学徒) Experience Level: Intermediate experience. Duties: Prepares ingredients (cutting, marinating, pre-cooking). Assists Commi 1 or Chef de Partie in cooking. Responsible for specific prep areas like dim sum, sauces, or vegetables. Skills Needed: Basic Chinese culinary techniques, some speed and accuracy. COMMI 3 (初级厨房助理 / 三级厨房学徒) Experience Level: Entry-level. Duties: Performs basic prep work: washing, peeling, portioning. Maintains cleanliness in the kitchen. Supports all other chefs with mise en place. Skills Needed: Willingness to learn, follow instructions, basic kitchen hygiene.
