Job Purpose

The F&B Captain is responsible for supervising service staff, ensuring smooth restaurant operations, maintaining service standards, and delivering an exceptional guest dining experience. The role involves leading a team, coordinating between kitchen and service, handling guest complaints, and ensuring efficient service flow.

Key Responsibilities

  • Guest Service
  • Greet and escort guests to their tables.
  • Ensure high standards of customer satisfaction.
  • Handle guest complaints and special requests courteously and efficiently.
  • Suggest menu items, wine pairings, and upsell to enhance guest experience.
  • Team Supervision
  • Supervise stewards, waiters, and other service staff.
  • Allocate duties and ensure timely service.
  • Train and motivate team members on service standards, grooming, and etiquette.
  • Conduct pre-shift briefings to share daily specials, promotions, and service goals.
  • Operational Excellence
  • Coordinate between kitchen and service for smooth operations.
  • Ensure proper mise en place and table setup as per standards.
  • Maintain cleanliness and hygiene in the service area.
  • Ensure compliance with SOPs and safety regulations.
  • Sales & Revenue
  • Assist in achieving restaurant revenue targets through upselling and suggestive selling.
  • Monitor table turnover and ensure efficient use of seating capacity.
  • Support management in planning promotions and events.
  • Administrative Duties
  • Prepare shift schedules for service staff.
  • Maintain records of breakages, wastage, and customer feedback.
  • Assist in stock control of cutlery, crockery, and glassware.

  • Excellent communication and interpersonal skills.
  • Strong leadership and team management.
  • Knowledge of F&B service standards, menu, and beverages.
  • Guest-oriented with problem-solving abilities.
  • Ability to work under pressure and handle peak hours efficiently.

Qualifications & Experience

  • Diploma/Degree in Hotel Management or relevant field preferred.
  • Minimum 2–4 years of experience in F&B Service, with at least 1 year in a supervisory role.
  • Experience in hotels, fine dining, or reputed restaurants is desirable.
  • Fluency in English and local language.
