Senior Food Scientist

Role Overview: As the Head of R&D for Whey Protein Products at Kapi, you will be responsible for developing and optimizing a range of whey-based products including powders, shakes, bars, cookies, and mixes. Your role will involve handling formulation, taste masking, solubility, stability, nutrition balance, and ensuring compliance with FSSAI regulations. You will also be involved in scaling recipes into commercial production with manufacturers. Key Responsibilities: - Develop and optimize whey powders, flavoured shakes, protein bars, cookies, and functional mixes. - Handle formulation, taste masking, solubility, stability, and nutrition balance. - Conduct lab trials, pilot batches, and shelf-life studies. - Ensure FSSAI compliance, labeling accuracy, and food safety standards. - Scale recipes into commercial production with manufacturers. Qualifications Required: - 3-8 years of proven experience with whey protein products (not just dairy or food in general). - Strong technical knowledge of protein fortification challenges such as heat stability, taste masking, and dispersibility. - Demonstrated success in taking whey products from concept to market launch. - Degree in Food Tech / Dairy Tech / Food Science specialized in protein. - Startup mindset: resourceful, fast, execution-driven.
