1. Raw Honey Quality Inspection
Inspect and test incoming raw honey for:
Moisture content (should be below 20%)
HMF (Hydroxymethylfurfural) levels
Sugar profile (fructose/glucose ratio)
Color and aroma
Pollen content (for origin verification)
Presence of contaminants or residues (e.g., antibiotics, pesticides
Laboratory Testing Responsibilities
Perform the following lab tests regularly:
Moisture test using refractometer
HMF test (to assess heating damage)
Diastase activity (enzyme activity level)
pH and acidity
Electrical conductivity (to determine botanical origin)
Sugar profile using HPLC or TLC methods
Adulteration tests (check for added sugar, glucose, rice syrup, etc.)
Microbiological tests (yeast, mold, bacteria)
Hygiene and Safety Compliance Ensure GMP (Good Manufacturing Practices) and FSSAI/ISO standards are followed Maintain cleanliness of lab and processing area Follow food safety protocols (HACCP plan implementation if required)
