Job Description

We are seeking a passionate and skilled Pastry Chef de Partie (CDP) to join our culinary team. The ideal candidate will assist in preparing, baking, and presenting a variety of high-quality desserts, pastries, and baked goods. The role requires creativity, precision, and a strong sense of teamwork to maintain the café’s premium standards in taste and presentation.

Key Responsibilities:

  • Prepare and produce a wide range of pastries, desserts, and bakery items according to recipes and standards.
  • Ensure consistent product quality, flavor, and presentation across all pastry items.
  • Assist the Head Chef in developing new dessert concepts and seasonal menus.
  • Maintain cleanliness, hygiene, and food safety standards in the pastry section at all times.
  • Monitor inventory levels and ensure timely requisition of ingredients and supplies.
  • Supervise and guide commis and trainees in pastry preparation and finishing.
  • Manage baking schedules to ensure fresh products throughout the day.
  • Control wastage and optimize ingredient utilization.
  • Ensure compliance with HACCP and café safety regulations.
  • Collaborate with the kitchen and service teams for smooth daily operations.

Requirements:

  • Diploma or certification in Bakery & Confectionery / Culinary Arts.
  • Minimum 3-6 years of experience in a pastry or bakery section (preferably in cafés or fine dining establishments).
  • Strong knowledge of pastry techniques, baking science, and dessert plating.
  • Proficiency in preparing mousses, tarts, cakes, breads, and viennoiseries.
  • Good understanding of ingredient handling, storage, and food safety.
  • Creativity, time management, and attention to detail are essential.
  • Ability to work under pressure in a fast-paced environment.

Preferred Skills:

  • Experience with modern pastry styles (e.g., mirror glaze, entremets, plated desserts).
  • Basic knowledge of vegan, gluten-free, or healthy dessert options.
  • Artistic presentation and garnishing skills.
