Job Title: Commis 2 – Thai Cuisine

Job Summary:

The Commis 2 – Thai Cuisine is responsible for preparing authentic Thai dishes under the supervision of senior chefs. This role involves executing mise en place, maintaining food quality, and ensuring hygiene standards are met while assisting in day-to-day kitchen operations within the Thai section.

Key Responsibilities:

  • Prepare and cook Thai dishes such as curries, stir-fries, soups, salads, and rice/noodle dishes according to recipes and standards.
  • Assist the Chef de Partie or Commis 1 with daily prep and service.
  • Handle mise en place: chopping vegetables, marinating meats, and preparing sauces.
  • Ensure proper storage of Thai herbs, spices, and fresh ingredients.
  • Follow food safety and hygiene standards (HACCP or local regulations).
  • Minimize food wastage and monitor portion control.
  • Keep the workstation clean and organized throughout service.
  • Maintain knowledge of classic and modern Thai culinary techniques.
  • Assist with receiving and storing kitchen supplies as needed.

Qualifications and Skills:

  • Minimum 1–2 years of experience in Thai or Asian cuisine.
  • Basic culinary certificate or diploma preferred.
  • Familiarity with Thai ingredients, spice levels, and cooking techniques.
  • Good knife skills and food presentation awareness.
  • Ability to work under pressure and follow instructions.
  • Basic understanding of kitchen safety and sanitation practices.

Job Title: Commis 3 – Thai Cuisine

Job Summary:

The Commis 3 – Thai Cuisine assists in the preparation of ingredients and supports kitchen operations for the Thai section. This is an entry-level role suitable for someone with basic culinary knowledge and a passion for learning authentic Thai cooking.

Key Responsibilities:

  • Assist in basic food preparation, such as washing, peeling, and cutting vegetables and herbs.
  • Support Commis 2 and senior chefs in mise en place and service.
  • Maintain cleanliness of the kitchen, tools, and workstations.
  • Properly store ingredients and food items.
  • Follow standard operating procedures for hygiene and safety.
  • Learn and apply Thai culinary techniques under guidance.
  • Assist in waste disposal and kitchen organization tasks.
