Commi I Chinese

The Commis I (Chinese) is responsible for preparing authentic Chinese dishes under the supervision of senior chefs, ensuring that guests experience high-quality flavors, presentation, and service standards that match the reputation of a luxury resort.

Key Responsibilities:

• Food Preparation & Cooking
• Prepare, cook, and present a wide range of Chinese dishes including dim sums, noodles, fried rice, soups, stir-fries, and wok-based items.
• Assist Chef de Partie (CDP) and Deputy CDP in daily kitchen operations.
• Ensure consistency in taste, quality, and presentation.
• Kitchen Operations
• Handle mise en place for Chinese section (cutting vegetables, preparing sauces, marinades, stocks, etc.).
• Maintain smooth workflow during breakfast, lunch, and dinner service.
• Follow standard recipes and plating guidelines.
• Hygiene & Safety
• Maintain cleanliness and hygiene in the Chinese section and overall kitchen.
• Adhere strictly to HACCP, food safety, and sanitation standards.
• Handle ingredients and kitchen equipment safely.
• Teamwork & Collaboration
• Coordinate with other sections (Continental, Indian, Bakery, etc.) to ensure timely service.
• Support Commis II/III in their work and share knowledge when needed.
• Communicate effectively with team members for smooth operations.
• Stock & Waste Management
• Monitor stock levels for sauces, condiments, and raw materials.
• Report shortages or quality issues to seniors.
• Minimize food waste and ensure proper storage.

Qualifications & Experience:

• Diploma/degree in Hotel Management or Culinary Arts.
• 2–4 years of experience in Chinese cuisine, preferably in luxury resorts, fine dining restaurants, or 5-star hotels.
• Good knowledge of Chinese cooking methods (stir-fry, steaming, wok cooking, deep frying).
• Familiarity with authentic sauces and condiments like soy, oyster sauce, chili paste, etc.

Pay: ₹20,000.00 - ₹23,000.00 per month
