Role Summary

 

Commis II III

 

Key Responsibilities and Duties (Commis III & Commis II)

 

  • Preparation and Hygiene (Commis III Focus):

    • precise cutting, washing, and portioning

    • Maintain an immaculate and sanitary workstation at all times.

  • Cooking and Production (Commis II Focus):

    • Assist the Chef de Partie CDP directly in cooking hot-line items and preparing simple side dishes.

    • Garde Manger

    • plating and dish presentation

  • Operational Standards (Both Roles):

    • Prepare basic stocks and sauces for the Continental section.

    • FIFO

    • HACCP FSSAI
