Role Summary

Commis II III

Key Responsibilities and Duties (Commis III & Commis II)

Preparation and Hygiene (Commis III Focus):
- precise cutting, washing, and portioning
- Maintain an immaculate and sanitary workstation at all times.
Cooking and Production (Commis II Focus):
- Assist the Chef de Partie CDP directly in cooking hot-line items and preparing simple side dishes.
- Garde Manger
- plating and dish presentation
Operational Standards (Both Roles):
- Prepare basic stocks and sauces for the Continental section.
- FIFO
- HACCP FSSAI
