Job Summary

A Chinese Commis I is a skilled junior cook specializing in Chinese cuisine. The role involves preparing mise en place, cooking dishes such as stir-fries, dim sum, soups, and noodle dishes, maintaining hygiene standards, and assisting the Chef de Partie in delivering high-quality Chinese dishes consistently.

Key Responsibilities1. Food Preparation

  • Prepare mise en place for Chinese dishes: vegetables, meats, seafood, sauces, and marinades.
  • Chop, slice, and portion ingredients according to recipes and standards.
  • Prepare stocks, soups, and bases for various dishes.
  • Assist in the preparation of dim sum, noodles, fried rice, and appetizers.

2. Cooking & Presentation

  • Cook Chinese dishes following standardized recipes and chef instructions.
  • Operate wok, steamers, fryers, and other kitchen equipment safely.
  • Ensure food is cooked to proper taste, texture, and presentation standards.
  • Maintain authentic Chinese flavor profiles, seasoning, and garnishing.

3. Quality Control

  • Ensure all ingredients are fresh and properly stored.
  • Maintain consistency in taste, appearance, and portion size.
  • Monitor cooking times, temperature, and hygiene practices.

4. Kitchen Operations

  • Assist the Chef de Partie during service and busy periods.
  • Coordinate with other sections of the kitchen for smooth workflow.
  • Label, store, and rotate ingredients following FIFO (First In, First Out) procedures.
  • Help with receiving and organizing supplies when necessary.

5. Hygiene & Safety

  • Maintain cleanliness and organization of the workstation.
  • Follow food safety guidelines, including HACCP standards.
  • Handle knives, woks, and kitchen equipment safely.

6. Teamwork & Learning

  • Assist in training Commis II/III and trainees when required.
  • Learn new dishes, recipes, and techniques from senior chefs.
  • Support other kitchen sections when needed.

Skills & Qualifications

  • 1–3 years of experience in Chinese kitchen operations.
  • Knowledge of Chinese cooking techniques: stir-frying, steaming, deep-frying, dim sum, and sauces.
  • Strong knife skills and ingredient knowledge.
  • Ability to work under pressure and manage multiple tasks.
  • Culinary training is an advantage but not mandatory.

Job Type: Full-time

Pay: ₹18,000.00 - ₹22,000.00 per month
