Job Description – Bakery CDP (Chef de Partie)

Department: Bakery & Pastry
Reports To: Executive Chef / Sous Chef

Key Responsibilities:

• Prepare and produce bakery items such as breads, rolls, cookies, cakes, pastries, and desserts
• Ensure consistency in taste, texture, and presentation
• Plan daily mise-en-place and control wastage
• Maintain food hygiene, cleanliness, and safety standards (FSSAI)
• Assist in menu planning and new product development
• Supervise and guide commis and trainees
• Ensure proper storage and stock rotation (FIFO)
• Coordinate with other kitchen sections when required

Requirements:

• Minimum 2–4 years of experience as Bakery CDP / Senior Commis
• Knowledge of baking techniques, temperature control, and dough handling
• Hotel or reputed bakery experience preferred
• Ability to work under pressure and in shifts
• Good discipline, hygiene, and team coordination skills

Job Description – Chinese CDP (Chef de Partie)

Department: Kitchen – Chinese Section
Reports To: Executive Chef / Sous Chef

Key Responsibilities:

• Prepare authentic Chinese dishes (Indian-Chinese / Pan-Asian as per menu)
• Handle wok operations and live counters efficiently
• Ensure consistency in taste, portion, and presentation
• Control food cost and minimize wastage
• Maintain hygiene and safety standards as per hotel policy
• Train and supervise commis staff
• Ensure timely service during peak hours and banquets
• Assist in menu planning and introducing new dishes

Requirements:

• Minimum 2–4 years of experience as Chinese CDP or Senior Commis
• Strong knowledge of sauces, gravies, and wok cooking
• Experience in hotel / fine dining / banquets preferred
• Ability to work in a fast-paced environment
• Good communication and leadership skills
