Bar Manager – High-End Luxury Venue [Asilo]

Role Overview

We are seeking a polished and performance-driven Bar Manager to lead and elevate the bar experience at Asilo, Mumbai’s most iconic rooftop destination. This role demands deep expertise in modern mixology, impeccable grooming, high-speed service capabilities, and a confident, guest-facing persona suited for high-profile hospitality environments.

Core Responsibilities

• Conceptualise and execute seasonal and signature cocktail menus
• Lead the bar team in maintaining consistency, speed, and quality during high-volume service
• Implement and train staff in advanced mixology techniques — infusions, foams, clarified cocktails, and more
• Ensure classic cocktail mastery across the team
• Keep the beverage program aligned with local and global trends — from Japanese whisky to craft gins
• Engage guests with theatrical bartending presentations — smoking, flaming, and tableside service
• Collaborate with culinary and events teams for bespoke beverage pairings and VIP experiences
• Be camera-ready for social media content, features, and promotions

Required Experience & Skillset

• 4-7 years of experience in:

Rooftop bars

Luxury hotels

Cocktail bars

International venues or stints

• Strong understanding of:

Modern mixology and ingredient-driven beverage innovation

Classic cocktails with precision execution

Premium spirit knowledge — both Indian and international labels

• Trained in bar theatrics and storytelling through presentation
• Proven leadership in fast-paced, high-energy environments

Persona & Style

• Well-spoken, confident, and charismatic behind the bar and on the floor
• Maintains clean grooming, modern style, and a refined appearance
• Displays emotional intelligence — reads guest preferences, adapts tone, and curates personalized service
• Comfortable being featured on reels, stories, and social promotions as the face of the bar
