Job Description

Job Overview:

The Assistant Manager F&B Purchase is responsible for supporting and executing end-to-end procurement processes for food and beverage items across outlets/locations. This role ensures timely sourcing of high-quality ingredients and materials at the best value, in compliance with safety, legal, and company standards.

Key Responsibilities:

  1. Procurement & Vendor Management:

    • Source and negotiate with reliable suppliers for F&B items (raw materials, packaging, beverages, etc.).
    • Maintain a strong supplier network and ensure timely deliveries.
    • Manage vendor performance, contracts, and relationships.
    • Coordinate with the central procurement team and outlet managers for daily/weekly needs.
  2. Purchase Planning & Inventory Coordination:

    • Forecast purchasing needs based on consumption trends, seasonality, and menu requirements.
    • Monitor and maintain optimal stock levels, avoiding understocking or overstocking.
    • Coordinate with stores, kitchen, and warehouse teams for accurate inventory reconciliation.
  3. Costing & Budgeting:

    • Analyze and control F&B costs while ensuring quality standards.
    • Support F&B Controller and Finance in budgeting, cost control, and variance analysis.
  4. Compliance & Quality Assurance:

    • Ensure compliance with FSSAI, local health, and safety norms.
    • Oversee procurement audits and documentation (GRNs, purchase orders, vendor bills).
    • Conduct regular quality checks on received goods.
  5. System & Reporting:

    • Use ERP/software systems (SAP, Oracle, Zoho, etc.) for purchase entries and tracking.
    • Generate reports on daily, weekly, and monthly procurement metrics.
    • Provide support during audits and internal reviews.

Key Skills & Competencies:

  • Strong negotiation and analytical skills
  • Deep understanding of F&B category products
  • Knowledge of food safety & regulatory standards
  • Vendor and stakeholder management
  • Attention to detail and data accuracy
  • Good working knowledge of MS Excel and ERP systems
  • Effective communication and coordination

Qualifications & Experience:

  • Bachelor’s degree in Hotel Management / Supply Chain / Commerce or relevant field
  • 4–6 years of experience in F&B purchase, preferably in hospitality, QSR, or entertainment industry
  • Experience handling perishable and non-perishable food items procurement
