Job Description

As a PhD candidate at the Leibniz Institute of Vegetable and Ornamental Crops (IGZ) and Technische Universitt Berlin, you will be part of the research project "GluAmin" funded by the German Research Foundation. In this role, you will contribute to the investigation of the influence of glucosinolate-based amines on the formation of Maillard-like products in model systems and foods, as well as the isolation, identification, and assessment of the aroma potential of these reaction products in processed Brassica vegetables. **Key Responsibilities:** - Plan and conduct plant cultivation and food chemistry experiments - Perform chemical analysis of educts and reaction products using HPLC-MS, GC-MS, and photometric methods - Isolate and identify novel reaction products using HRMS and NMR - Characterize flavor potential of reaction products using GC-MS/O - Analyze and publish results in international journals - Present research findings at national and international conferences **Requirements:** - Masters or Diploma degree in food chemistry, chemistry, or a related field - Experience with instrumental analytical methods (HPLC-MS, GC-MS) - Experience in extracting natural compounds from complex matrices - Knowledge of isolation and structural elucidation of natural products - Experience in statistical analysis of research results, or willingness to acquire such skills - Willingness to undertake a research stay at another institute for several months - Proficiency in MS Office (Word, Excel, PowerPoint) - Excellent written and spoken English - Self-motivation, independence, organizational skills, and ability to work in an international team In addition to the above responsibilities and requirements, the position offers the following benefits: - Opportunity to work on an interdisciplinary, innovative research project related to human nutrition - Challenging position with the possibility to pursue a doctorate - Dynamic research environment with state-of-the-art laboratory facilities near Berlin and Potsdam - Flexible and family-friendly working arrangements, including mobile work (up to 50%) - Company pension scheme, annual bonus, 30 days vacation per year - Subsidized public transport ticket (Deutschlandticket) IGZ encourages applications from all qualified candidates and is committed to diversity and equal opportunity.
