Job Description

The Distillery Operations Manager is responsible for overseeing the end-to-end production process in the distillery, ensuring adherence to high-quality standards, promoting safety, and driving process improvement. The role also focuses on implementing sustainable practices, optimizing resources, and maintaining production consistency.

Key Responsibilities:

1. Distillery Operations Management:

  • Oversee the production process, from milling grains to distillation.
  • Ensure compliance with quality standards.
  • Generate, monitor, and analyze production data to identify areas for improvement.
  • Develop and implement strategies to enhance distillation plant efficiency while maintaining production output.
  • Collaborate with operations and quality teams to streamline processes.

2. Production Quality and Consistency:

  • Analyze and maintain consistency in manufacturing processes.
  • Oversee the production process from raw material procurement to aging.

3. Safety and Health:

  • Promote a health and safety culture within the distillery.
  • Minimize risks associated with operations, including confined spaces and chemical handling.
  • Ensure compliance with PPE usage and permit protocols for safe working practices.

4. Environmental and Sustainability Initiatives:

  • Implement sustainable practices, such as water conservation and waste management.
  • Reduce environmental impact by using biogas as a substitute fuel in the boiler.

5. Continuous Improvement and Cost Management:

  • Identify opportunities for process improvement and cost reduction.
  • Optimize manpower and yield while ensuring efficient use of resources.
  • Minimize wastage of yeasts and enzymes to improve cost efficiency.

Key Performance Indicators (KPIs):

  • Target Production: 10 KL/day or 3.2 million L/annum.
  • Meet product quality benchmarks consistently.
  • Implementation of safety protocols and zero LTAs

Qualifications and Skills:

  • Masters degree in Alcohol Technology, Chemical Engineering, or a related field.
  • 7-10 yrs. of proven experience in managing distillery operations or related manufacturing processes.
  • Strong knowledge of fermentation and distillation techniques.
