Job Summary:
The F&B Controller is responsible for monitoring, controlling, and analyzing the food and beverage costs of the property. This role ensures that all F&B operations maintain cost efficiency, adhere to company standards, and achieve profitability targets through accurate data analysis and inventory management.
Key Responsibilities:
1. Cost Control & Analysis
Monitor daily food and beverage costs and report variances to management.
Conduct regular cost analysis and prepare monthly F&B cost reports.
Analyze recipe costing, menu engineering, and sales mix to improve profitability.
Implement cost-control measures across outlets and kitchens.
2. Inventory & Stock Management
Supervise and coordinate monthly and surprise inventory counts for all F&B stores.
Verify receiving, storing, and issuing procedures are properly followed.
Ensure inventory levels are maintained within operational and budget limits.
Reconcile physical stock with system records and investigate discrepancies.
3. Procurement & Receiving
Work closely with the purchasing department to verify prices, quantities, and quality of received goods.
Ensure compliance with procurement policies and approved suppliers.
Verify supplier invoices and maintain updated cost data in the system.
4. Menu & Recipe Costing
Prepare and update standard recipes and cost cards in coordination with the Executive Chef and F&B Manager.
Evaluate menu items based on cost, yield, and profitability.
Suggest pricing strategies for new and existing menu items.
5. Reporting & Auditing
Prepare daily, weekly, and monthly cost control reports for management.
Support internal and external audits with accurate documentation.
Highlight areas of wastage, pilferage, or non-compliance and recommend corrective actions.
6. System & Policy Compliance
Ensure that all F&B control systems (POS, inventory, and accounting software) are accurate and synchronized.
Maintain compliance with company policies, accounting standards, and local regulations.
Qualifications & Skills:
Bachelor’s degree in Accounting, Finance, or Hotel Management.
Minimum 2–5 years of experience as an F&B Controller in the hospitality industry.
Strong knowledge of cost accounting, inventory systems, and POS interfaces.
Proficiency in MS Excel and hotel ERP systems (e.g., Oracle, Sun, FMC, or similar).
Excellent analytical, organizational, and communication skills.
Detail-oriented with a focus on accuracy and process improvement.
