Job Summary: We are seeking a passionate and skilled Demi Chef de Partie (DCDP) specializing in Chinese cuisine to join our kitchen team. The ideal candidate should have strong knowledge of Chinese culinary techniques, experience with wok cooking, and the ability to maintain consistency and quality in food preparation. You will assist the Chef de Partie in daily kitchen operations, ensuring high standards in hygiene, efficiency, and food presentation. Key Responsibilities: Prepare, cook, and present authentic Chinese dishes, including stir-fry, dim sum, noodles, soups, and rice-based items. Assist the Chef de Partie in running a specific section of the kitchen smoothly and efficiently. Ensure food is prepared according to standardized recipes, portion sizes, and quality standards. Maintain mise en place and stock levels throughout the shift to ensure a smooth service. Uphold the highest standards of food hygiene and safety regulations at all times. Monitor and minimize food wastage through proper stock rotation and portion control. Support training and mentoring of Commis and junior kitchen staff. Ensure the cleanliness and maintenance of all work areas, utensils, and equipment. Collaborate with the team to develop and test new menu items and seasonal specials. Report any maintenance, hygiene, or staffing issues to senior chefs immediately. Requirements: Proven experience of 2+ years in a similar role, preferably in a high-volume restaurant or hotel. Expertise in Chinese cooking techniques such as stir-frying, steaming, deep frying, and wok handling. Knowledge of traditional Chinese ingredients, sauces, and flavor profiles. Culinary certification or diploma preferred. Ability to work under pressure in a fast-paced environment. Strong organizational and multitasking skills. Positive attitude, team-oriented, and willingness to learn. Basic understanding of food cost control and kitchen operations. Working Conditions: Flexible work hours, including weekends and holidays. Physically demanding – requires standing for long periods and handling hot kitchen equipment. May be required to assist in other sections of the kitchen when needed.
