Job Description

The Pearl, Burdwan is hiring a skilled and versatile Chef de Partie (CDP) or Senior Commis 1 to lead our Chinese section. We are looking for an "All-Rounder" who is a master of the Wok but also possesses strong practical knowledge of making Kolkata-style Biryani for our restaurant and banquet orders.

If you are a speed-oriented chef who can handle the pressure of A La Carte orders and the volume of Banquet cooking, we want to meet you.

Key Responsibilities

1. Chinese Section (Primary Responsibility):

  • Wok Skills: Expertly handle the wok for high-heat tossing of Fried Rice, Noodles, and stir-fries.
  • Menu Mastery: Prepare all standard Indo-Chinese items (Chilli Chicken, Manchurian, Hakka Noodles, Soups, Crispy Veg, etc.) with consistent taste and presentation.
  • Sauce Preparation: Prepare base sauces (Schezwan, Hot Garlic, etc.) in bulk for daily operations.
  • Mise-en-place: Ensure all chopping, cutting, and pre-prep for the Chinese station is ready before peak hours.

2. Biryani & Indian Support:

  • Biryani Preparation: Must be able to cook (or assist heavily in) Kolkata Style Chicken & Mutton Biryani (preparation of Yakhni, rice boiling, and the final "Dum" process).
  • Bulk Cooking: Assist the Indian section during heavy banquet dates or wedding seasons when Biryani orders are high.

3. Kitchen Management & Hygiene:

  • Manage food cost and minimize wastage in the Chinese section.
  • Maintain strict hygiene and cleanliness of the cooking station, fridges, and utensils.
  • Guide junior staff (Commis/Helpers) during service.
  • Ensure food goes out quickly during rush hours without compromising quality.

Requirements

  • Experience: Minimum 3–5 years of experience in a Hotel, Multi-Cuisine Restaurant, or reputable Catering firm.
  • Specialization: Must be a "Chinese All-Rounder" (Cutting + Cooking).
  • Secondary Skill: Must have proven experience in making Biryani (this is a mandatory requirement).
  • Language: Bengali and Hindi proficiency.
  • Ability: Must be able to handle Outdoor Catering (ODC) pressures when required.
