Position: Kitchen Supervisor

Location: AIIMS Gorakhpur (AIIMS GKP)

Department: Hospital Kitchen & Dietary Services

Reporting To: Kitchen Manager / General Manager – Dietary Services

Role Purpose

The Kitchen Supervisor is responsible for day-to-day supervision of hospital kitchen operations, ensuring safe, hygienic, timely, and quality food preparation and service to patients, staff, and attendants in accordance with diet charts, food safety norms, and hospital policies.

Key Responsibilities

1️Kitchen Operations & Supervision

Supervise daily food preparation, cooking, portioning, and service as per approved menus and diet plans.

Ensure timely service of patient meals, staff meals, and special diets.

Coordinate with dietitians and nursing staff for diet modifications and special instructions.

Monitor kitchen workflow to avoid delays and errors.

2️ Food Safety, Hygiene & Compliance

Ensure strict adherence to FSSAI, FSDA, NABH (if applicable), and AIIMS hospital guidelines.

Maintain cleanliness of kitchen, stores, equipment, utensils, and service areas.

Ensure use of hair caps, gloves, aprons, masks, and proper uniforms by all staff.

Monitor and maintain temperature logs, lactometer readings, cleaning schedules, and sanitation practices.

3️Records, Registers & Documentation

Maintain and update daily records including:

FIFO & FEFO stock registers

Consumption sheets

Temperature logs

Lactometer readings

Hospital kitchen checklist (daily/weekly/monthly)

Pest control records

Ensure all records are accurate, updated, and ready for audits.

4️ Inventory & Store Control

Monitor receipt, storage, and issue of raw materials.

Ensure FIFO/FEFO practices are followed at all times.

Report shortages, excess stock, spoilage, or pilferage immediately.

Coordinate with procurement team for timely indenting and replenishment.

5️Manpower Management

Supervise cooks, helpers, and support staff.

Ensure staff discipline, attendance, punctuality, and proper grooming.

Assist in training staff on hygiene, food safety, and SOP compliance.

Report manpower issues or misconduct to the reporting authority.

6️Quality Control & Patient Satisfaction

Check food quality, taste, portion size, and presentation before service.

Handle patient and staff complaints professionally and ensure corrective action.

Collect and review feedback forms and report issues.

7️Audit & Inspection Support

Prepare kitchen for internal audits, external inspections, and AIIMS authority checks.

Ensure immediate compliance with audit observations and corrective actions.

Coordinate with management during inspections and visits.

Skills & Competencies

Knowledge of hospital kitchen operations

Understanding of food safety & hygiene standards

Basic inventory & documentation skills

Team supervision and coordination

Ability to work under pressure in hospital environment

Qualification & Experience

Diploma / Degree in Hotel Management, Catering, or related field (preferred)

Minimum 3–5 years of experience in hospital or institutional kitchen

Experience in government hospitals or AIIMS setup preferred

Working Conditions

Shift-based duty as per hospital schedule

Must be available during peak hours, audits, and emergencies

Job Types: Full-time, Permanent

Pay: ₹20,000.00 - ₹25,000.00 per month
