Commis I – Butchery

About The Orchid Hotel Mumbai

The Orchid Mumbai is India’s leading 5-star Ecotel hotel, renowned for its sustainability, world-class culinary standards, and exceptional guest service. We are seeking a skilled Commis I – Butchery to support our kitchen operations with expertise in meat, poultry, and seafood preparation.

Key Responsibilities

  • Ensure proper butchery of all meat, poultry, and seafood items in accordance with menu and recipe requirements.
  • Cut, trim, portion, debone, marinate, and prepare items as per standard yield and portion control.
  • Maintain high standards of hygiene and food safety in the butchery area.
  • Ensure proper storage, labeling, and rotation following FIFO principles.
  • Inspect quality of received products, report discrepancies to Chef/Supervisor.
  • Support culinary team with timely supply of prepared items to different kitchens.
  • Assist in menu planning by providing input on cuts and yield.
  • Maintain knives and butchery tools in proper condition and ensure safe operations.
  • Reduce wastage and optimize cost control within the section.
  • Adhere strictly to hotel SOPs, HACCP & Ecotel requirements.
  • Perform duties assigned by Chef de Partie/Sous Chef.

Requirements

  • Minimum 3–5 years of experience in butchery, preferably in a 5-star hotel environment.
  • Strong technical skills in meat/seafood cutting and portioning.
  • Knowledge of different cuts, yield management, and international preparation standards.
  • Understanding of food safety, sanitation, and HACCP protocols.
  • Physically fit and able to work in cold room environments when required.
  • Ability to work in a team and under pressure during peak hours.
  • Passion for culinary excellence and continuous improvement.

Education

  • Diploma/Degree in Culinary Arts or relevant field preferred.
  • Professional butchery certifications is a plus.
