Role Overview We are launching a convenience store concept similar to FamilyMart, but focused on Indian ready-to-eat and processed meals with a self-service retail system. We are seeking a Food Technologist to lead the development, packaging, and safety processes for these products. Monthly Salary Range: ₹60,000 to ₹120,000 Key Responsibilities 1. Product Development Identify Indian dishes suitable for ready-to-eat format (curries, rice, gravies, snacks). Standardize recipes for consistency in taste, texture, and portion size. Conduct shelf-life studies under chilled, frozen, and ambient storage. Recommend preservation methods (retort, freezing, vacuum sealing, MAP). 2. Packaging & Labeling Select appropriate packaging materials (microwave-safe trays, pouches, eco-friendly options). Ensure packaging supports shelf stability, food safety, and consumer convenience. Provide clear reheating/storage instructions. Prepare nutritional labels and comply with FSSAI/other legal requirements. 3. Food Safety & Compliance Implement HACCP and GMP (Good Manufacturing Practices). Ensure compliance with FSSAI, Halal standards (if required), and export regulations. Develop food safety protocols for handling, processing, and storage. 4. Production & Scale-Up Advise on setting up a central kitchen or working with contract manufacturers. Recommend required machinery (retort machine, vacuum packer, blast freezer, etc.). Develop SOPs (Standard Operating Procedures) for staff training and quality checks. Conduct pilot production trials before scaling up. 5. Advisory & Support Provide ongoing guidance during store launch. Recommend suppliers for raw materials, packaging, and processing equipment. Support R&D for new product launches. Qualifications Degree in Food Technology / Food Science. Minimum 3–5 years of experience in food processing, packaged food, or ready-to-eat meals. Knowledge of Indian cuisine and its processing challenges. Strong background in HACCP, FSSAI, shelf-life testing, and food safety. Experience working with packaging solutions and food preservation technologies. Deliverables Feasibility report on suitable ready-to-eat products. Standardized recipes with process guidelines. Packaging and labeling recommendations. Shelf-life test results. SOPs for production, quality, and food safety. Duration & Engagement Phase 1 (1–2 months): Product feasibility and packaging trials. Phase 2 (2–3 months): Product development and shelf-life testing. Phase 3 (Ongoing): Advisory during production and retail launch.
