Job Summary: We are seeking a versatile and experienced Shawarma, Grill & Tandoor Expert who specializes in preparing a wide range of flame-cooked dishes including shawarma, alfaham , grilled chicken etc. The ideal candidate should have deep knowledge of marination techniques, grilling methods, and authentic regional flavors, with the ability to deliver high-quality dishes consistently in a fast-paced kitchen environment. Key Responsibilities: Shawarma Preparation: Marinate and cook shawarma meats using vertical rotisserie. Slice shawarma precisely and assemble wraps and platters with appropriate sides. Alfaham & Grill Items: Prepare alfaham chicken using charcoal or gas grill with signature spices. Monitor grilling temperature, doneness, and food safety during cooking. Tandoor Cooking: Operate traditional tandoor oven to prepare naan, tandoori chicken, paneer tikka, etc. Manage tandoor heat levels and timing for even, flavorful cooking. Maintain cleanliness and safety around the tandoor equipment. General Kitchen Duties: Ensure mise en place is ready for all grill and tandoor stations. Monitor inventory levels for spices, meats, and grill-specific items. Maintain high standards of hygiene, cleanliness, and food safety protocols. Assist in training junior staff or helpers in grill and tandoor basics. Participate in menu development with new grill or shawarma items. Requirements: 3+ years of experience in a commercial kitchen, specializing in shawarma, tandoor, and grilled items. Ability to work under pressure during peak hours. Skilled in using tandoor, grill, and rotisserie equipment. Strong understanding of food hygiene, safety, and handling practices. Flexibility to work evening shifts, weekends, and holidays. Preferred Qualifications: Experience in both dine-in and takeaway/kitchen settings. Basic spoken English or Hindi or local language for communication with team.
