Job Description: You will be responsible for showcasing your expertise as a South Indian Chef specializing in the art of crafting delicious Benne Dosa, a crispy and buttery dosa that originates from Karnataka. Your role will involve preparing a variety of South Indian dishes, emphasizing on maintaining high quality, consistency, and authenticity throughout. Your key responsibilities will include meticulously preparing and cooking Benne Dosa using traditional techniques, managing the dosa station which includes batter preparation, fermentation, and seasoning, ensuring adherence to food hygiene and safety standards, creating other South Indian delicacies like Idli, Vada, Sambar, and Chutneys, monitoring stock levels and assisting in ingredient procurement, training junior kitchen staff in dosa-making techniques as needed, contributing to the innovation of new South Indian menu items, and maintaining the cleanliness and organization of the kitchen area. To excel in this role, you should possess proven experience as a South Indian chef with a focus on Benne Dosa, a deep understanding of South Indian ingredients, spices, and cooking methods, the ability to thrive in a fast-paced kitchen environment, knowledge of hygiene and food safety standards, excellent communication skills, and a strong attention to detail coupled with a genuine passion for South Indian culinary traditions. Preferred qualifications include a culinary diploma or certification, although previous experience in a South Indian restaurant, particularly in Karnataka-style cuisine, will be advantageous.
