As a Product Development Chef (R&D Chef) at Frozzeto in Guwahati, India, you will play a pivotal role in driving new product innovation, enhancing existing recipes, and upholding quality standards for our frozen food range. Your responsibilities will encompass various key areas: New Product Development (NPD): - Innovate and create new frozen food products. - Experiment with diverse ingredients, flavors, and techniques to elevate taste, texture, and reheating quality. - Develop recipes that are scalable for mass production while ensuring consistency. Recipe Standardization & Optimization: - Standardize recipes for frozen food products to maintain uniform taste and texture. - Optimize ingredient ratios and production methods for efficiency and cost-effectiveness. - Conduct trials to evaluate the impact of freezing, thawing, and reheating on product quality. Quality Assurance & Food Safety: - Collaborate with food technologists to ensure compliance with FSSAI and other regulatory standards. - Monitor product shelf-life stability and suggest enhancements. - Ensure proper handling and storage of raw materials to prevent contamination. Production Collaboration & Scaling: - Coordinate with the manufacturing team to implement recipes on a large scale. - Address production challenges, such as ingredient behavior in freezing conditions. - Sustain batch consistency during large-scale production. Market & Consumer Research: - Keep abreast of industry trends and competitor offerings in the frozen food sector. - Conduct internal product tastings and feedback sessions. - Modify recipes based on consumer preferences and market demands. Qualifications Required: - Possess a culinary degree or diploma in Food Science, Culinary Arts, or related field. - Additional certification in Food Technology or Food Science is desirable. - Have over 3 years of experience in food product development, particularly in frozen or packaged food. - Experience with freezing techniques like blast freezing and IQF is advantageous. - Prior involvement in HORECA, large-scale kitchens, or food manufacturing is preferred.
