As a Chef de Partie - Bakery at Bruno's, you will play a key role in our artisan bakery where bread and viennoiserie are crafted with precision, patience, and passion. Your expertise will contribute to shaping an exceptional range of baked goods, from slow-fermented sourdoughs to buttery croissants and seasonal delights. Your responsibilities will include overseeing the daily production of various bakery items such as breads, rolls, laminated doughs, and breakfast pastries. You will be expected to master and maintain fermentation techniques, dough hydration, mixing, proofing, and baking processes. Collaboration with the Head Chef and Executive Pastry Chef on menu planning and product development will be essential to ensure the consistency in taste, texture, and presentation of all baked items. Furthermore, you will be responsible for maintaining hygiene and food safety standards according to FSSAI and HACCP guidelines, as well as monitoring stock levels and assisting in bakery inventory management. Training and supervising junior team members will also be part of your role to uphold the quality and creativity of our bakery offerings. To excel in this position, you should have formal training in bakery or culinary arts (preferred but not mandatory if skilled) and a minimum of 3 years of professional experience in a bakery setting. A strong knowledge of sourdough, pre-ferments, enriched doughs, viennoiserie, and lamination techniques is required. Additionally, an understanding of different flours, grains, and fermentation processes is essential. Your commitment to quality, creativity, and consistency, along with your ability to work early morning shifts and manage production timelines, will be crucial. Strong team spirit and leadership skills are also desired to ensure a collaborative and efficient work environment.
