As a Dairy Technologist at our plant located in Modasa with the Head Office in Ahmedabad, you will be responsible for overseeing the cheese-making processes, particularly focusing on Mozzarella. Your educational background should include a B.Tech / B.Sc in Dairy Technology, Dairy Science, or Food Technology, or an M.Tech / M.Sc in Dairy Technology, Dairy Microbiology, or Food Processing. Your role will require a strong understanding of cheese-making processes, including milk standardization, coagulation, curd stretching, brining, and packaging. You should be familiar with dairy microbiology, enzymes, starter cultures, and have knowledge of FSSAI regulations, GMP, and HACCP. Experience in quality control tests such as moisture, pH, salt content, texture, and meltability is essential. Additionally, proficiency in handling equipment for cheese vats, stretchers, brine tanks, and packaging units is necessary. Ideally, you should have 2 to 4 years of hands-on experience in cheese production, specifically Mozzarella, gained from working in a commercial dairy or cheese manufacturing facility. During your work as a Dairy Technologist, you will need to reliably commute to Ahmedabad, Gujarat, or plan to relocate before starting work.
