Job Summary: The Sous Chef is responsible for overseeing the daily kitchen operations, supporting the Head Chef in delivering high-quality, multi-cuisine dishes, and ensuring smooth coordination among kitchen staff. The role involves supervising food preparation, maintaining hygiene standards, training team members, and ensuring timely service in a fine-dine setup. ⸻ Key Responsibilities: Assist the Head Chef in daily kitchen operations and food preparation activities. Supervise and coordinate the work of Commis and junior chefs. Ensure all dishes are prepared and presented as per standard recipes and plating guidelines. Monitor kitchen inventory, including food stock, equipment, and supplies. Enforce hygiene, sanitation, and safety standards in compliance with FSSAI and company SOPs. Conduct regular training and mentoring for kitchen staff. Innovate and suggest new dishes or improvement ideas for the multi-cuisine menu. Ensure quality control and consistency in food preparation across all cuisines. Manage kitchen shifts, staff schedules, and leave planning. Handle kitchen-related issues calmly and efficiently. Coordinate with service and front-of-house teams for smooth order execution. Assist in cost control, minimizing food waste, and efficient resource utilization. ⸻ Key Requirements: Proven experience as a Sous Chef or Senior CDP in a fine-dine or multi-cuisine restaurant. In-depth knowledge of Indian, Continental, Oriental, and other world cuisines. Strong leadership, team management, and mentoring skills. Understanding of kitchen hygiene, food safety, and HACCP practices. Ability to work under pressure and maintain quality during peak hours. Diploma/Degree in Culinary Arts or Hotel Management preferred. Flexibility to work in shifts, weekends, and holidays as per restaurant needs.
