Job Description: Chocolatier / Production Chef Location: Mahabaleshwar, Maharashtra Company: ZIAHO Craft Chocolate (Premium Bean-to-Bar Chocolates) Position Type: Full-Time Role Overview We are seeking a skilled Chocolatier / Production Chef who will lead product development, production, inventory management, and procurement for our premium chocolate business. This role requires a mix of culinary creativity and operational discipline the right candidate must be able to design innovative chocolate products while ensuring cost-efficient, scalable production . Key Responsibilities 1. Product Development Create, test, and scale recipes for chocolate bars, spreads, dragees, pralines, and seasonal products. Innovate new product lines in sync with consumer trends and festive demand. Maintain consistency in taste, texture, and presentation across batches. 2. Production Management Oversee daily chocolate production tempering, moulding, enrobing, and packaging. Ensure compliance with food safety, hygiene, and quality standards. Optimize production schedules to meet B2B and retail timelines. 3. Inventory & Procurement Manage raw material stock (cocoa, dairy, inclusions, packaging). Liaise with suppliers for timely procurement at the best cost-quality balance. Monitor wastage and implement systems to minimize losses. 4. Team & Systems Train and supervise junior kitchen staff. Implement SOPs for production, storage, and quality checks. Work with management to forecast demand and align production capacity. Requirements Formal training in pastry/chocolatier programs OR 2+ years professional experience in chocolate/pastry production. Strong understanding of chocolate tempering, ganache, pralines, and spreads. Experience in managing kitchen operations, inventory, and procurement. Ability to scale recipes from R&D to commercial production. Passion for premium artisanal chocolate.
