Role Description This is a full-time on-site role for an F&B Controller located in Chandigarh. The F&B Controller will be responsible for cost control, menu costing, and ensuring financial accuracy. Daily tasks will include analyzing financial data, controlling food and beverage costs, and preparing accounting reports. The role requires collaboration with the kitchen and operations teams to maintain budgetary control and enhance financial performance. Key Responsibilities: 1. Cost Control: Effectively control Food & Beverage costs, minimize wastage, pilferage, and optimize efficiency. 2. Inventory Management: Conduct daily physical inventory of liquor stock, update and maintain receipts in the system. 3. Variance Analysis: Prepare variance analysis for Food & Beverage and communicate with relevant parties. 4. POS System Management: - Check and verify voids, discounts, happy hours, complimentary sales, staff meals, and package meals in the POS system. - Ensure accurate sales transfer to Property Management Systems (PMS). 5. Sales and Revenue: - Check the cost of sales in all F&B outlets and ensure that the costs are within budget. - Verify menu pricing on the POS systems and ensure correct prices are loaded. 6. Reporting: - Prepare daily and monthly F&B reports, staff meal cost reports, and duty drinks management reports. - Distribute reports to management. 7. Stock Taking and Audits: - Participate in stock taking at restaurants. - Conduct surprise spot checks at all F&B outlets. - Ensure proper issuance of materials from stores. 8. System Maintenance: - Maintain security of departmental information. - Update selling prices in POS as per authorized instructions. - Ensure menu items have recipes. Requirements: - Proven experience in F&B control or a similar role. - Strong analytical, problem-solving, and leadership skills. - Familiarity with food safety regulations, labor laws, and industry trends. - Experience with POS systems and PMS.
