South Indian Cook – Job Responsibilities Prepare Authentic South Indian Dishes Make breakfast items like idli, dosa, vada, upma, pongal, etc. Prepare main-course items such as sambar, rasam, curd rice, lemon rice, tamarind rice, poriyal, kootu, etc. Batter & Masala Preparation Daily preparation and fermentation of idli–dosa batter. Prepare chutneys, sambar masala, rasam powder, and other spice mixes. Cooking & Service Quality Ensure taste, texture, and consistency of all dishes. Maintain proper food presentation and portion control. Kitchen Hygiene & Safety Maintain cleanliness of cooking area, utensils, and equipment. Follow FSSAI hygiene and food safety standards. Inventory & Stock Management Check availability of ingredients every day. Inform management about required groceries and raw materials. Time & Workflow Management Prepare dishes on time during rush hours. Coordinate with helpers for chopping, cleaning, and serving. Equipment Handling Operate dosa tawa, steamers, fryers, grinders, and other kitchen equipment safely. Menu Execution & Customization Prepare dishes according to customer preference (less spicy, no onion, etc.). Suggest new South Indian items for menu improvement. Food Cost & Waste Control Follow standard recipes to control food cost. Minimize food wastage through proper planning and storage. Team Cooperation Work with kitchen staff, stewards, and management smoothly. Maintain discipline and professional behavior in the kitchen.
