The person must be able to lead production, maintain taste consistency, innovate new products, and manage kitchen operations efficiently. Key Responsibilities1. Complete Sweets Production (Traditional + Modern + Boutique) Must be able to prepare: Milk & Khoya Sweets: Rasgulla, Rasmalai, Rabdi, Barfi, Peda, Kalakand, Cham Cham, Sandesh, Basundi Desi Ghee & Besan/Groundnut Based: Motichur Laddu, Besan Laddu, Mysore Pak, Mohanthal, Halwas Dry Fruit & Premium Sweets: Kaju Katli, Kaju Roll, Dry Fruit Laddu, Anjeer Rolls, Badam Pista sweets Festival & Regional Specialties: Gujiya, Ghevar, Balushahi, Imarti, Malpua, Chhena-based sweets Boutique / Fusion / Modern Mithai: Chocolate mithai varieties, fusion laddus, baked mithai, gifting assortments **2. Sugar-Free / Diabetic-Friendly / Health-Conscious Sweets Must be able to use: Stevia, Jaggery, Brown Sugar, Coconut Sugar, Dates Paste, Palm Jaggery To create low-calorie and natural-sweetness mithai , maintaining taste, texture & shelf-life . 3. Namkeen & Snack Production Samosa, Kachori, Dhokla, Khasta, Mathri Sev, Bhujia, Chiwda mixes, Moong Dal, Masala Namkeen Premium roasted namkeen blends (optional) 4. Chaat & Street Food Pani Puri, Dahi Puri, Sev Puri, Bhel, Raj Kachori Aloo Tikki, Chole Tikki Pav Bhaji, Vada Pav (optional) 5. Kitchen & Team Leadership Assign work to junior halwais & helpers Train staff to maintain standard recipes Ensure clean, hygienic, FSSAI-compliant kitchen 6. Inventory & Cost Control Manage milk, khoya, dry fruits, spices, flour, gas usage efficiently Monitor wastage & maintain food cost targets 7.
