Procurement & Purchasing Source and procure raw materials including vegetables, dairy, poultry, seafood, groceries, spices, masala, grains, bakery, beverages, and packaging items. Purchase kitchen equipment, operating supplies, cleaning and housekeeping materials when required. Evaluate and compare vendor quotations to ensure cost effectiveness. Release Purchase Orders (PO) and track supply schedules. Vendor Coordination Develop and maintain strong vendor database for all food & non-food items. Conduct vendor price negotiations and contract renewals. Monitor vendor quality, delivery timelines, credit terms and reliability. Resolve supplier complaints, delivery discrepancies, and quality issues. Inventory & Cost Control Coordinate with Storekeeper, Chef, and Operations Team to understand daily requirements. Monitor stock levels and prevent over-ordering / stockouts. Ensure purchasing is aligned to restaurant food cost and budget. Support menu changes by sourcing new ingredients required by the culinary team. Documentation & Compliance Maintain PO records, GRNs, invoice tracking, and vendor bills for payment. Ensure procurement is aligned with FSSAI, hygiene & safety standards. Coordinate with Finance & Accounts for timely vendor payments. Cross-Department Coordination Work closely with Head Chef, Kitchen Team, Outlet Managers and Accounts. Communicate expected delivery dates and resolve any shortages.
