Greetings from Avanti Frozen Foods Pvt Ltd..! We have Application Chef / New Product Development Chef / R&D Chef opportunity in our new Food Processing Unit (Shrimp) in Yerravaram, Rajahmundry. Product Development & Innovation Create and develop new value-added shrimp products such as marinated, cooked, battered, breaded, and ready-to-eat items. Translate culinary concepts into scalable industrial formulations for mass production. Collaborate with R&D, QA, and Production teams to test prototypes and finalize commercial-ready recipes. Process & Technical Expertise Work closely with production teams to ensure culinary integrity is maintained during scale-up processes. Ensure all new recipes and processes comply with food safety standards, including HACCP and BRC/IFS regulations. Optimize cooking, freezing, marination, and coating techniques specific to shrimp. Market & Customer Engagement Analyze market trends, consumer behavior, and competitor products to identify innovation opportunities. Participate in customer presentations, food shows, and sampling sessions to demonstrate culinary expertise and product capabilities. Customize recipes to meet specific customer requirements (flavor profiles, clean label, nutritional goals, etc.). Training & Standardization Train internal teams and co-packers on preparation, cooking methods, and presentation of shrimp value-added products. Develop and maintain standardized recipes, SOPs, and quality benchmarks for all culinary operations. Qualifications: Degree/Diploma in Culinary Arts or Food Technology. 8+ years of experience in seafood or protein value-added product development, with at least 3 years in a corporate or industrial culinary role. Strong knowledge of shrimp species, quality parameters, and value-added processing techniques. Understanding of industrial food manufacturing equipment (e.g., marinators, breading lines, steam ovens, IQF). Familiarity with food safety and regulatory requirements in seafood manufacturing. Excellent communication skills; ability to collaborate across departments and with clients. Desirable Traits: Passionate about seafood innovation and sustainability. Strong organizational and project management skills. Experience working with global seafood markets and regional taste preferences. Culinary presentation and sensory evaluation expertise.
