Job Summary: We are seeking a highly experienced, creative, and skilled Snacks and Sweets Master to lead the production of high-quality Indian sweets. The ideal candidate must have profound knowledge of traditional recipes, techniques, and ingredient handling to ensure consistent quality, flavor, and hygiene standards across our entire range of traditional offerings. Key Responsibilities: 1. Production and Quality Control: Mithai Production: Oversee and execute the preparation of a wide variety of traditional Indian sweets (e.g., Ladoo, Barfi, Gulab Jamun, Jalebi, Rasgulla, Halwa) ensuring authentic taste, texture, and visual appeal. Namkeen Production: Manage the preparation of savory snacks (e.g., mixtures, sev, chakli, samosas, kachoris) maintaining crispness, flavor balance, and consistency. Recipe Adherence: Strictly follow all standardized recipes, portion control guidelines, and established cooking/frying times to minimize waste and ensure uniform quality. 2. Innovation and Menu Development: Develop new and innovative flavors or seasonal sweets and snacks to keep the offerings fresh and attractive to customers. Adapt recipes for mass production while maintaining artisanal quality. Manage and execute special production runs during festive seasons (e.g., Diwali, Holi). 3. Hygiene, Safety, and Inventory: Ensure the kitchen area, tools, and machinery used for sweet/snack preparation are kept meticulously clean and sanitized. Monitor stock levels of specialized ingredients unique to the Mithai and Namkeen sections and coordinate orders with the inventory team. Ensure strict adherence to all food safety and hygiene regulations (HACCP principles). Manage the shelf life and proper storage of finished products. 4. Team Supervision: Train, mentor, and supervise junior cooks and assistants in traditional sweet-making techniques and safety procedures. Manage workflow within the section to meet production targets efficiently, especially during peak demand. Qualifications and Skills: Hygiene: Thorough understanding of food safety standards and kitchen hygiene practices. Physical Requirements: Ability to stand for long periods, lift moderate loads, and work efficiently in a high-temperature kitchen environment.
