As a Product Development Officer in the R&D department located at Bidadi, Bangalore, your primary responsibility will be to manage product development at the pilot scale and oversee pilot plant operations independently. You will collaborate with internal stakeholders such as PD Officers, PD Managers, Lab Officers, Lab Managers, Packaging Managers, Packaging Officers, and the Marketing Team. Additionally, you will engage with external stakeholders including Business Partners, Vendors, and Ingredient Suppliers. To excel in this role, you must possess a deep understanding of bakery ingredients, including their selection criteria and critical properties. Your knowledge should extend to the impact of ingredients on mixing, baking, and product quality. Familiarity with storage conditions, implications, and basic quality control procedures is essential. Hands-on experience with bakery processes like mixing, baking, and packing is required as you will be actively involved in developing recipes. Your role will involve experimenting, showcasing lateral thinking, and staying updated on market trends for new product launches within the segment and other food categories. You will be responsible for tasks such as collecting competitor products, defining characteristics for analysis, collaborating with the lab, developing prototypes, and determining packaging requirements. Regular interaction with the marketing team to gather consumer insights through research activities will be part of your routine. Your role may also include leading product development initiatives for new products, quality enhancements, nutritional improvements, and productivity enhancements. Effective vendor development and monitoring, recipe optimization based on market demands, addressing technical inquiries, supporting new product introductions, and collaborating with cross-functional teams are key aspects of your responsibilities. Desired competencies for this role include knowledge of food ingredients, recipes, baking science, bakery products, food product analysis, nutrition, pilot plant operations, and factory operations in the food industry. A suitable candidate should hold a Graduation or Post Graduation degree and possess 2-5 years of experience in food processing industries, preferably in bakery or related fields.,
