Company: Yak Brewing The Quality Control Manager at Yak Brewing will oversee and ensure the quality standards of our premium spirits, maintaining our commitment to excellence and tradition. Job Purpose Responsible for monitoring quality and adherence to specifications for all beer production on all shifts. Provides information to all production employees on the interpretation and application of related quality standards by using problem solving techniques and objective testing to assure conformance to standards. Collects and reports quality, production, and process information to management. Primary follow up of laboratory testing and other departmental activities to maintain compliance. Responsible for coordinating the qualitative analysis of raw materials, intermediates, and new beer samples collected throughout the brewing process and chemical analysis, adjustment, and approval for grains, fermentations and by-products. Key Responsibility Area (KRA) Analysis of mash/beer daily and as required. Perform accurate and timely analysis of raw materials, production, by-product samples and any other samples that may be necessary to monitor the production process. Perform data entry and analysis as required to maintain production logs or other data capture tools. Perform routine maintenance and calibration of all brewing laboratory and production monitoring equipment to ensure compliance. thru team and equipment suppliers Participate in process and product troubleshooting efforts and provide analytical support as requested. Partner with Operations to troubleshoot material quality concerns. Maintain statistical process control charts and lead reviews with operations to drive improvements to yield. Responsible for the quality root cause corrective action program in the brewing. Participate in Laboratory Housekeeping and Sanitation activities. Maintain awareness and demonstrate willingness to conform to all hygiene and sanitation requirements. Document process deviations and report. Ensure compliance with new brewing security protocols throughout the process. Ensure that all brewing water systems adhere to water quality standards and specifications. Grain Testing: Monitor incoming grain quality through grain testing and Milling monitor the milling process through sieve analysis as per requirements Mashing: Monitor mash and beer as needed to ensure process control and quality. Fermentation: Monitor fermentation process to identify any deviations in product and process. Report out of specification conditions to brewing and QC management. Responsible for monitoring yeast media and conducting yeast transfers with operations. Assist in providing Quality training for all employees as needed. Must meet/comply with all safety requirements, attend required training, and wear personal protective equipment where required. Supervise for maintaining of Log Books, Reference Material, Methods, and Calibration of lab equipment’s. Work closely with Quality Assurance team & GCMS team to meet all necessary regulatory requirements. Qualification: B. Tech (Food Technology) - Bachelor's Degree Chemistry / Microbiology Experience: 12+ Years’ experience in brewing/beverag/food industry, analytical methods and laboratory procedures including general laboratory equipment. Knowledge in GCMS laboratory equipment will be value adding. Required Competencies Demonstrated written and oral communication skills. Demonstrated ability to conduct analytical testing by following test methods and accurately interpreting results. Demonstrated ability to develop and maintain effective working relationships. Proven industry experience as a GCMS Analyst. Demonstrated ability to conduct analytical testing by following test methods Possess physical capabilities to safely satisfy work requirements within industrial work settings. Able to work in a hot/cold, noisy work environment, climb steps/walk/stand for extended periods of time.
