Key Responsibilities / Accountabilities To take full responsibility for the bar opening procedure and pay attention to the cleanliness and alignment of equipment, freshness and correct preparation of all ingredients, and stock levels of all bottles. Ensure smooth running of all bar operations. Ensure weekly/daily checklists are completed by bar staff. Ensure all of the bar team adhere to systems and procedures as outlined in the standards of procedures manual. Ensure all stock is rotated and stored in a safe manner. Ensure all bars are prepared for set up in advance of each shift and in accordance with relevant standards of procedure. Ensure that all staff arrive to work on time and in correct uniform and name badge as per weekly rota. Develop, train and coach bar staff to the standards required of the establishment in accordance with the standards of procedures manual. Induction, monitoring and ongoing training of casual bar staff. Manage daily inventory, wastage, promo drinks and spoilage. Record and report incidents as appropriate. Should have detailed knowledge about Beer Pouring Manual. SOP for Beer line cleaning. SOP for receiving fresh kegs and calculating empty keg variance. Ensure that bar requisitions are made as per the par stock.
