Job Overview We are seeking a passionate and skilled Chef with deep expertise in Andhra and Rayalaseema cuisine to lead our kitchen. The ideal candidate will be responsible for crafting authentic dishes, managing kitchen operations, ensuring quality control, and helping scale our menu. This role is crucial to maintaining the integrity of our food while adapting to a high-volume, delivery-focused model. Key ResponsibilitiesMenu & Food Preparation: Prepare authentic, high-quality Andhra and Rayalaseema dishes (e.g., Gongura Mutton, Rayalaseema Rotte, Andhra Chicken Fry, Pesarattu, Avakaya, Chepala Pulusu, Royyala Iguru, Pulihora). Expert knowledge of traditional gravies, chutneys, podis (powders), and pickles specific to the regions. Develop, standardize, and cost recipes for the cloud kitchen model. Ensure consistent taste, portion size, and plating suitable for delivery. Introduce seasonal or weekly specials to keep the menu dynamic. Kitchen Operations: Oversee daily kitchen operations, including mise en place, cooking, and packaging. Maintain strict inventory control for raw materials, spices, and kitchen supplies. Ensure efficient kitchen workflow to manage high order volumes during peak times. Adhere to and enforce all FSSAI guidelines, hygiene, and safety standards (HACCP). Minimize waste and optimize kitchen productivity. Quality & Consistency: Implement and maintain rigorous quality checks at every stage of food preparation. Taste and evaluate food daily to ensure adherence to authentic flavors and standards. Train and guide kitchen staff (cooks, helpers) on specific techniques and recipes. Required Skills & Qualifications Proven Experience: Minimum of 2-3 years of professional cooking experience, with at least 2 years specifically focused on Andhra and Rayalaseema cuisine . Culinary Expertise: In-depth, hands-on knowledge of ingredient selection, spice blends, and cooking techniques unique to the regions (e.g., handling of tamarind, red chilies, curry leaves, mustard seeds, etc.). Cloud Kitchen/High-Volume Aptitude: Understanding of the pace and requirements of a delivery-only kitchen. Experience in QSR, cloud kitchen, or catering is a significant plus. Quality Focus: Keen eye for detail and an uncompromising attitude towards taste and hygiene. Adaptability: Ability to work in a fast-paced startup environment and handle pressure during rush hours. Team Player: Strong communication skills and the ability to lead and work with a small team. Formal culinary training or a degree from a recognized hospitality institute is preferred, but extensive practical experience is paramount. Nice-to-Have Experience with kitchen management software for inventory or order tracking. Basic understanding of food costing and kitchen profitability.
