DCDP Tandoor and Chinese

• Prepare tandoori masalas, spice blends, and accompaniments (e.g., mint chutney, onion salad).
• Ensure tandoor oven is preheated and maintained at correct temperature.
• Handle all tandoor items such as naan, roti, kebabs, tikka, and kulchas.
• Ensure proper cooking techniques for even charring and flavor.
• Maintain consistency in portion and presentation.
• Follow food safety protocols (HACCP).
• Keep workstation clean and organized.
• Maintain tandoor equipment and tools
• Assist in stock rotation and proper storage.
• Inform the CDP/Sous Chef of low stock or quality issues.
• Coordinate with kitchen and service staff for timely orders.
• Support junior staff in prepping and training when needed.
• Prep sauces, chopped vegetables, proteins, and noodles/rice.
• Ensure woks and cooking surfaces are cleaned and ready.
• Execute stir-frying, steaming, deep-frying, and other Chinese cooking methods.
• Cook popular dishes like Hakka noodles, Manchurian, fried rice, spring rolls, etc.
• Maintain balance of seasoning and authentic flavor profiles.
• Keep cooking area and utensils clean.
• Follow kitchen safety norms for wok handling, oil use, etc.
• Monitor usage of sauces, condiments, and perishables.
• Ensure FIFO system is followed.
• Work with CDP and other chefs to ensure smooth kitchen operations.
• Help train Commis staff when required.

Pay: ₹20,000.00 - ₹35,000.00 per month
