Job Title: Halwai Chef - COMMI Role Overview: The Halwai & Pantry Chef is responsible for preparing a wide variety of traditional Indian sweets, snacks, and namkeen, as well as assorted cold dishes, salads, chaat, desserts, and pantry items. The role combines culinary expertise in authentic Indian confectionery with a strong knowledge of pantry operations, ensuring all items are prepared to the highest standards of taste, hygiene, and presentation. Key Responsibilities Prepare traditional Indian sweets (mithai), namkeen, and desserts such as gulab jamun, laddoo, peda, barfi, halwa, etc. Prepare and assemble pantry-side items such as salads, raita, chaat, cold appetizers, sandwiches, yogurt-based sides, and fruit platters. Design diverse, appealing menus and contribute innovative recipes, maintaining authenticity for Indian sweets and creativity for cold items. Ensure excellence in taste, quality, and presentation for both confectionery and pantry offerings. Source and manage high-quality ingredients, monitor inventory, and minimize wastage in both sections. Adhere strictly to food hygiene and safety standards for all prep and storage areas. Collaborate with kitchen and service staff to ensure prompt and accurate fulfillment of orders and smooth service flow. Maintain records on production, wastage, inventory, and recipe documentation as required. Support with kitchen training for junior staff and uphold cleanliness and organization in all workstations. Qualifications and Skills Significant experience in both Indian sweets/namkeen preparation (Halwai) and pantry/cold kitchen operations, ideally in restaurants or hotels.
