Food Production Oversight · Manage end-to-end food production processes across multiple kitchens and outlets. · Ensure food is produced consistently in line with recipe standards, portioning, and plating guidelines. · Monitor kitchen operations for efficiency, quality, and output. Team Management · Supervise and train kitchen production staff, including cooks, prep teams, and support staff. · Implement schedules and work rosters to maximize productivity. · Promote a collaborative and high-performance kitchen culture. Standardization & Quality Control · Develop and enforce SOPs for food preparation, hygiene, and safety. · Ensure consistency in taste, presentation, and quality across all locations. · Conduct regular quality checks and audits. Inventory & Coordination · Coordinate with the Supply Chain Manager to ensure timely availability of ingredients and supplies. · Minimize waste through proper stock rotation and yield management. · Maintain accurate production and consumption records. Hygiene, Safety & Compliance · Enforce food safety and sanitation standards in compliance with HACCP and FSSAI regulations. · Ensure all kitchen equipment is maintained and safely operated. · Conduct regular safety drills and hygiene training for staff. Innovation & Menu Support · Collaborate with the culinary team to scale new recipes or menu items for mass production. · Provide input on production feasibility during menu planning. Preferred Candidate Profile: · Education: Diploma/Degree in Culinary Arts, Hotel Management, or Food Production. · Experience: 7+ years in food production management within hotels, QSRs, cloud kitchens, or large-scale catering units. · Skills: o Strong culinary knowledge and production planning o Leadership and team management skills o Familiarity with kitchen equipment and industrial production units o Expertise in hygiene, food safety, and compliance standards o Ability to work under pressure and meet production timelines · Certifications: HACCP/FSSAI certification is a plus.
