Food & Beverages Cost Controls Officer

Key Responsibilities

Cost Control & Analysis

· Monitor daily food and beverage costs and highlight variances against budgets.

· Analyze consumption patterns and recommend corrective actions.

· Prepare recipe costing and ensure adherence to standard portion sizes.

· Track theoretical vs actual food cost and investigate discrepancies.

· Support menu engineering by identifying high-margin items.

Inventory Management

· Conduct regular physical stock counts and surprise audits.

· Reconcile physical inventory with system records and investigate variances.

· Ensure FIFO/FEFO practices are followed for perishable goods.

· Monitor slow-moving, non-moving, and expired inventory.

Process & Internal Controls

· Implement and enforce SOPs related to purchasing, receiving, storage, and issuance.

· Verify Goods Received Notes (GRNs), invoices, and store documentation.

· Ensure proper authorization and documentation for stock movements.

· Strengthen controls to prevent pilferage, fraud, and wastage.

Audit & Compliance

· Prepare units for internal and external audits.

· Ensure compliance with company policies, hygiene standards, and statutory requirements.

· Maintain accurate records for audit trails.

· Identify control gaps and recommend process improvements.

· Work closely with chefs, restaurant managers, purchase, and stores teams.

Reporting & MIS

· Generate daily, weekly, and monthly cost reports.

· Provide variance analysis with actionable insights to management.

· Develop dashboards for food cost %, wastage, and inventory metrics.

· Collaborate with finance and operations for budgeting and forecasting.

Pay: ₹26,000.00 - ₹31,000.00 per month
