Job Summary:

We are looking for a skilled and dedicated Tandoor Commis 1 to join our culinary team. The ideal candidate should have hands-on experience working with a tandoor oven and preparing traditional North Indian dishes such as kebabs, rotis, naans, and tandoori meats. You will assist the Tandoor Chef in daily food preparation while maintaining high standards of quality, hygiene, and presentation.

Key Responsibilities:

• Prepare and cook tandoori dishes including breads, kebabs, and grilled meats according to recipes and standards.
• Ensure tandoor oven is properly maintained, heated, and cleaned before and after each service.
• Assist the Tandoor Chef in mise-en-place and daily food preparation.
• Marinate meats, seafood, and vegetables as per standard recipes.
• Maintain consistent quality and portion control in all tandoor dishes.
• Follow food safety, hygiene, and sanitation procedures at all times.
• Monitor cooking times and temperatures to ensure perfect doneness and flavor.
• Support other kitchen sections as needed during busy service periods.
• Ensure proper storage and labeling of all food items.
• Assist in stock rotation and inventory control to minimize wastage.

Requirements:

• Minimum 2–3 years of experience in an Indian kitchen, with at least 1 year in a tandoor section.
• Strong knowledge of Indian cuisine, spices, and traditional cooking techniques.
• Basic understanding of food hygiene and safety standards.
• Ability to work efficiently under pressure and as part of a team.
• Physically fit to handle heat and long hours near the tandoor oven.
• Positive attitude, reliability, and a passion for cooking.

Preferred Qualifications:

• Diploma or certification in Culinary Arts / Hotel Management.
• Experience in a 4-star or 5-star hotel environment.
• Familiarity with both vegetarian and non-vegetarian tandoor preparations.
