Job Description – Steward & Captain (Fine Dining Restaurant)

Location: Dwarka & Chandni Chowk, Delhi
Industry: F&B / Fine Dining

Position Overview

The Steward & Captain plays an integral role in delivering exceptional guest service in a fine-dining environment. This role involves ensuring guest satisfaction through professional service, maintaining high hygiene standards, and coordinating with the kitchen and service teams for smooth operations.

Key Responsibilities: Guest Service & Experience

  • Welcome and seat guests professionally while offering personalized attention.
  • Present menus, explain dishes, make recommendations, and support guests in their selection.
  • Take and serve food & beverage orders accurately and efficiently.
  • Ensure fine dining etiquette is followed in table setup, service sequence, cutlery placement, and food presentation.
  • Handle guest complaints or feedback professionally and escalate issues when needed.
  • Ensure each guest has a memorable and positive dining experience.

Operational Responsibilities

  • Prepare dining areas before service – table setup, linen, cutlery, glassware, and buffet arrangement (if applicable).
  • Maintain cleanliness and hygiene across the dining area, service stations, and pantry.
  • Ensure food and beverages are served at the correct temperature and with attention to detail.
  • Coordinate with the kitchen to ensure timely delivery of orders.
  • Support in billing, payment handling, and table clearance as required.
  • Monitor stock levels of service items such as cutlery, napkins, condiments, etc.

Team Coordination (Captain Responsibilities)

  • Lead, guide, and supervise Stewards during shifts.
  • Allocate sections, manage table assignments, and maintain service flow.
  • Conduct a briefing before each service to communicate menu changes, specials, and guest-specific requirements.
  • Train new team members in service standards, guest handling, and fine dine etiquette.
  • Assist management in improving guest satisfaction and service quality.

Standards, Safety & Hygiene

  • Ensure compliance with FSSAI and restaurant food safety and sanitation standards.
  • Maintain staff grooming standards as per fine dining norms.
  • Ensure proper cleaning and polishing of cutlery, crockery, and glassware.
  • Ensure proper handling of food, beverages, and equipment to maintain quality and safety.

Skill Requirements

  • Strong understanding of fine dine service standards (Silver service, French service, American service, etc.).
  • Excellent communication and guest interaction skills.
  • Good product knowledge of cuisine, beverages, ingredients, and menu items.
  • Ability to multitask and remain calm during peak operational hours.
  • Team leadership capabilities (Captain level).

Qualifications

  • Minimum 1–3 years of experience in fine dining (both Steward and Captain).
  • Hotel management diploma or relevant hospitality training preferred.
  • Good command over English and Hindi.

Job Types: Full-time, Permanent

Pay: ₹20,000.00 - ₹22,000.00 per month
