Job Title: Chef de Partie (CDP) - South Indian Cuisine Location : Baywatch Resort, Colva, Goa Reports to : Sous Chef / Executive Chef Department : Kitchen Job Overview : We are looking for an experienced Chef de Partie (CDP) to join our dynamic kitchen team specializing in authentic South Indian cuisine . The CDP will take ownership of their assigned section, ensuring the highest standards of food preparation, presentation, and hygiene. The role requires excellent knowledge of traditional South Indian dishes and a passion for cooking. Key Responsibilities : Cooking & Food Preparation : Prepare and cook South Indian dishes, including but not limited to dosas, idlis, vadas, sambars, curries, and regional rice preparations. Maintain consistency in taste, presentation, and quality of dishes as per restaurant standards. Follow recipes and guidelines to ensure authenticity and quality. Section Management : Oversee daily operations of the assigned section (e.g., Tandoor, Main Course, or Sides) and ensure smooth workflow. Ensure the section is fully stocked with ingredients and supplies, and manage inventory levels accordingly. Team Collaboration & Supervision : Supervise junior chefs and kitchen staff, providing guidance and training when necessary. Ensure the kitchen environment is organized, clean, and safe, adhering to hygiene and food safety regulations. Quality Control : Conduct regular checks on the quality of food preparation, ensuring it meets the restaurant's standards. Coordinate with the Sous Chef and Executive Chef to improve and refine recipes. Customer Experience : Work with the front-of-house team to accommodate special requests and dietary requirements from customers. Assist in developing seasonal and promotional menus focused on South Indian flavors. Operational Efficiency : Ensure that food is prepared in a timely manner, adhering to the restaurant’s service standards. Minimize waste through proper portioning and efficient use of ingredients. Qualifications : Proven experience as a Chef de Partie or in a similar role, preferably in South Indian cuisine. Deep understanding and passion for South Indian food and culinary techniques. Ability to work under pressure in a fast-paced kitchen environment. Knowledge of kitchen equipment and safety standards. Excellent communication and team collaboration skills. A relevant culinary qualification (e.g., Diploma in Culinary Arts) is preferred. Skills : Expertise in South Indian cooking techniques (e.g., dosa batter preparation, rice cooking, regional chutneys). Strong knife skills and attention to detail in food presentation. Ability to supervise and mentor junior kitchen staff. Ability to manage inventory and stock efficiently. Adaptability and willingness to learn new recipes or techniques.
