Job Description

The Production Officer/Executive will be responsible for managing day-to-day manufacturing operations at our chocolate processing plant. This role ensures smooth production, quality consistency, machine handling, manpower coordination, and compliance with FSSAI standards. The candidate will support continuous improvement and help maintain high standards of efficiency, hygiene, and product output. Key Responsibilities1. Production Management Oversee daily chocolate manufacturing operations (Dark/Milk/White compound, Mini Meltz, slabs, etc.). Plan and execute production schedules to achieve daily and monthly targets. Monitor ball mill, conching, tempering, moulding, and cooling line operations. Ensure correct batching, mixing, premixing, and ingredient dosing as per SOPs. Maintain accurate production reports, yield data, and wastage records. 2. Machine & Process Handling Handle and monitor machines such as: Ball Mill (500 kg and above) Conche / Refiner Moulding Machine Flow-wrap / Pillow Pack Machines Cooling Tunnel Pumps, Mixers & Melting Tanks Conduct basic troubleshooting and coordinate with maintenance for repairs. 3. Quality & Food Safety Ensure production meets internal quality standards and RichMeltz specifications. Conduct in-process quality checks: viscosity, fat %, texture, temper, aroma, batch consistency. Follow FSSAI hygiene norms, GMP, and 5S. Maintain strict cleaning & sanitation schedules. 4. Raw Material & Inventory Coordination Coordinate with stores for raw materials: cocoa powder, CBS fat, sugar, flavours, lecithin, etc. Ensure proper storage and temperature control of materials. Track consumption, batch-wise material usage, and maintain FIFO. 5. Team & Shift Management Supervise operators, helpers, and packaging staff during shifts. Train staff on SOPs, machine handling, hygiene, and safety practices. Allocate manpower based on workload. 6. Documentation & Compliance Maintain batch records, production logs, and machine running sheets. Ensure compliance with FSSAI, internal audits, and safety protocols. Assist in preparing SOPs, work instructions, and quality documentation. Required Skills & Qualifications Diploma/Degree in Food Technology, Mechanical, Chemical, or related field. 1–4 years experience in food manufacturing (chocolate/confectionery preferred). Understanding of chocolate processing, ingredient handling, and food safety norms. Strong knowledge of production planning and machine operations. Ability to handle shift operations independently. Good communication and leadership skills. Personality Traits Responsible and proactive. Strong problem-solving abilities. Quality-focused with attention to detail. Ability to handle pressure in a fast-paced production environment.
