Job Brief

We are seeking a detail-oriented and proactive Inventory Controller to manage and control all inventory movements across the property. The role involves monitoring stock levels, verifying deliveries, maintaining accurate records, and coordinating with the kitchen, bar, and service teams to ensure smooth and cost-efficient operations.

The ideal candidate should have strong analytical skills, sound knowledge of hospitality inventory processes, and the ability to work in a fast-paced environment.

Key Responsibilities : Inventory Management & Control

  • Maintain accurate records of all incoming and outgoing inventory items for food, beverages, bar stock, and general store supplies.
  • Monitor stock levels and conduct daily, weekly, and monthly physical stock counts.
  • Ensure proper storage, labeling, and rotation of inventory (FIFO method).
  • Track and reconcile variances between system stock and physical stock.
  • Report any discrepancies, wastage, or pilferage to the Cost Controller / Management.

Receiving & Verification

  • Inspect and verify deliveries against purchase orders, invoices, and quality standards.
  • Coordinate with the Purchase and Accounts teams to resolve mismatches or supplier issues.
  • Ensure all receipts are recorded accurately in the inventory system.

Systems & Documentation

  • Update and maintain inventory entries in the POS / ERP system (e.g., Toast, POSist, Shawman, Oracle, etc.).
  • Prepare daily consumption reports, stock movement registers, variance reports, and cost control documents.
  • Ensure compliance with SOPs and internal audit standards.

Coordination & Communication

  • Work closely with the Kitchen, Bar, Housekeeping, and F&B Service teams for requisitions and timely stock issuance.
  • Provide timely updates to the management on low stock, slow-moving items, and expiries.
  • Assist departments with planning and forecasting inventory needs.

Cost Control & Compliance

  • Support the Cost Control team in menu costing, recipe verification, portion control, and pricing accuracy.
  • Ensure compliance with hygiene, safety, and storage guidelines as per hospitality standards.
  • Participate in internal and external audits with complete documentation.

Requirements

  • Proven experience as an Inventory Controller / Storekeeper in the hospitality industry (restaurants, hotels, or resorts).
  • Strong understanding of F&B inventory procedures, cost control, stock management, and documentation.
  • Proficiency in POS/ERP systems and MS Excel.
  • Excellent analytical and numerical skills.
  • Strong organizational and time-management skills.
  • Ability to work independently and handle pressure during peak operations.
  • Minimum qualification: Graduate / Diploma in Hospitality Management or related field preferred.

Job Type: Permanent

Pay: ₹25,000.00 - ₹30,000.00 per month
