Executive Chef

As the Executive Chef at Pathirakozhi Restaurant, your role is crucial in ensuring food excellence and kitchen efficiency. You will be responsible for the following: - Designing innovative, authentic, and seasonal menus that align with the restaurant's theme and customer preferences, such as traditional Kerala or South Indian cuisine. - Updating menus regularly to incorporate fresh ingredients and market trends. - Supervising all kitchen operations, including food preparation, cooking, and presentation. - Ensuring the kitchen runs smoothly, efficiently, and cost-effectively. - Recruiting, training, and managing kitchen staff, including chefs, cooks, and helpers. - Delegating tasks and creating shift schedules. - Conducting performance reviews, providing coaching, and maintaining consistent taste, presentation, and portion size. - Ensuring all dishes meet restaurant standards before reaching the customer. - Overseeing ordering and stock control of ingredients and kitchen supplies. - Working with suppliers to secure the best prices and quality. - Monitoring food costs, minimizing waste, and ensuring profitability. - Enforcing food safety, cleanliness, and hygiene regulations according to local and FSSAI standards. - Conducting regular kitchen inspections and sanitation checks. - Addressing special dietary requests and complaints as needed. - Occasionally interacting with guests to gather direct feedback. **Qualifications Required:** - Previous experience as an Executive Chef or similar role. - Proficiency in menu planning, kitchen management, and food preparation. - Strong leadership and team management skills. - Knowledge of food safety regulations. - Excellent communication and interpersonal abilities.
