Job Description

You will be the culinary head of Haut Monde Rajputana Palace, a luxury wedding and corporate destination in Neemrana, Rajasthan. You will be responsible for designing and executing exceptional menus for destination weddings, banquets, and fine dining operations. Your expertise in large-scale wedding catering, innovative menu design, and premium guest experience delivery, along with strong leadership of the kitchen brigade, will be crucial in positioning the palace as a leading culinary destination for weddings and events in Rajasthan. - Design customized menus for destination weddings, banquets, and MICE events. - Ensure flawless execution of large-scale banquets, managing high-volume service without compromising quality. - Collaborate with wedding planners and clients to create personalized culinary experiences. - Introduce innovative food stations, live counters, and thematic setups to elevate weddings and events. - Oversee day-to-day operations of all kitchens (banquets, restaurants, in-room dining, events). - Maintain the highest standards of taste, presentation, hygiene, and food safety. - Innovate seasonal and festive menus to enhance guest experience. - Ensure timely and consistent food delivery during peak event hours. - Plan food costing, portion control, and wastage reduction to meet budgeted food cost targets. - Negotiate with vendors for quality ingredients at competitive prices. - Prepare forecasts for weddings and events to optimize resources and manpower. - Lead, train, and mentor the kitchen brigade with a focus on banquet and wedding execution. - Maintain discipline, teamwork, and professional standards within the kitchen. - Conduct regular workshops for staff on cuisines, plating, and event service efficiency. Qualifications & Skills: - Degree/Diploma in Culinary Arts/Hotel Management. - 8-12 years of progressive culinary experience in premium hotels/resorts. - Proven expertise in wedding catering, large-scale banquets, and multi-cuisine operations. - Strong leadership and organizational skills to manage high-pressure event operations. - Knowledge of food trends, modern presentations, and diverse cuisines. - Ability to balance creativity with cost control and operational efficiency.
